A baby-friendly fried peanut butter and jelly sandwich is a perfect introduction to solid foods for little ones practising baby-led weaning. This is just the baby friendly fried version which is next level.

Ingredient information
Bread - I have used white bread for this recipe, you can use a wholemeal bread which is more nutritious for baby and toddler. You can also remove the crusts for baby if that makes you feel more comfortable.
Strawberries - I have used strawberries for this recipe instead of jam which is a great addition to the recipe and makes it baby friendly.
Peanut butter - I have used a 100% nut butter for this recipe, this is best for baby when they start their weaning journey.
Butter - I have used a little unsalted butter to fry the sandwich. You can use a coconut oil or an olive oil for this recipe if you prefer.
Serving suggestion
This sandwich can be served on its own perfectly as an easy lunch.
If you did want to serve the jelly sandwiches with anything else, some cooked shredded chicken pieces is a great way to add some extra protein.
Or you could serve some plain natural Greek style yogurt to go alongside the pineapple and mint. Delicious!

Storage instructions
The sandwich can be stored in the fridge for up to 3 days, if stored in an airtight container.
If you wanted to freeze the the sandwich, you will need to get yourself a freezer bag or an airtight container.
Make sure that which ever you choose are labelled with the item and the date.
I use masking tape to label the airtight container. The sandwich will store in the freezer for up to 3 months.
To defrost the sandwich, leave in the fridge overnight to defrost and make sure it is fully defrosted, before serving.
Once the sandwich has been defrosted you will not be able to reheat.
Equipment used to help with this recipe
Frying pan - I love the non-stick surface of this particular frying pan and it’s suitable for all types of hob.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

Ingredients
Makes xx portions / servings
4 strawberries, mashed
1-2 teaspoons smooth squeezy peanut butter
2 slices of bread of your choice
1/4 teaspoon unsalted butter
xxxxx
Take one slice of bread and spread the mashed strawberries over the slice of bread.
Squeeze or drizzle the peanut butter over the strawberries and place the second slice of bread on top.
Take your frying pan and heat the butter in the frying pan on a medium high heat and coat the frying pan with the butter or enough oil if you choose to use a dairy free alternative.
Turn the heat down to a medium heat and place the PB&J sandwich in the frying pan and heat for about 2-3 minutes on each side until golden brown.
Leave to cool and cut into strips or triangles.
Recipe notes
It is really easy to make this recipe gluten free, all you will need to do is use a gluten free bread.
To make the recipe dairy free, you will need to use a dairy free butter or cooking oil such as coconut oil, peanut oil or olive oil
You can use an actual sandwich press if you have one too for this recipe.
