    Ingredient information

    Chicken - I have used some leftover chicken for this recipe. Leftover chicken such as a rotisserie chicken you had over the weekend makes the best curry recipe and it is quick and easy too.

    Olive oil - I have used a little olive oil to brown the chicken and onion granules. You can use an unsalted butter too.

    Onion - I have used onion granules for this recipe for a quick recipe, you can use a fresh diced onion too if you like.

    Garlic - I have used a garlic puree for this recipe for convenience. You can use 1 clove of garlic for the recipe as an alternative.

    Curry powder - I have used a mild curry powder for the curry flavour. A great allrounder for a curry recipe. You can use a mild curry paste too.

    Tomato puree/tomato paste - I have used tomato puree to add the sauce element to the curry recipe.

    Serving suggestion

    You could serve the leftover chicken curry with fluffy rice, pilau rice, basmati rice, coconut rice, cauliflower rice, green beans/frozen peas/tenderstem broccoli or quinoa, and a little bit of a dollop of plain Greek yogurt for a complete meal.

    Or you could serve the leftover chicken curry recipe with homemade naan bread or cauliflower traybake.

    Storage instructions

    The leftover chicken curry can be stored in the fridge for up to 3 days, stored in an airtight container.

    If you wanted to freeze the homemade chicken curry, you will need to make sure that the curry has cooled down before transferring to either a freezer bag (carefully) or airtight container.

    Ensure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.

    To defrost this great recipe, leave in the fridge overnight and make sure that it is fully defrosted, before re heating.

    To reheat, place the defrosted curry in a saucepan and reheat on a medium heat for 15-20 minutes. You can add in a splash of water if the curry is very thick.

    Once the leftover curry has been defrosted you will not be able to store leftovers, reheat or re freeze.


    Equipment used to help with this recipe

    Saucepan - So many pan sets out there but I particularly like to use pans with a non-stick surface for ease of cleaning and ones that are suitable for different types of hob surface.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    This is a very quick curry recipe using leftover cooked chicken. A fun way to serve a curry to your baby from 6 months old.

    Ingredients

    Instructions

    1. Add the olive oil to a medium saucepan or large pan and heat for a minute or so.
    2. Add in the leftover cooked chicken and the onion granules and cook on a medium-low heat until heated through.
    3. Spoon in the garlic puree and heat for a minute or so.
    4. Next add in the curry powder and tomato puree and mix together in the saucepan.
    5. Pour in 125ml hot water, the cooking time will be for 5-8 minutes until you achieve a thick tomato-based sauce. Give everything a good stir.
    6. Leave to cool slightly and serve with rice or homemade naan bread.

    Notes

    You can use other meats or fish such as cooked turkey for a quick leftover turkey curry recipe, or cooked cod or salmon.
