    Ingredient information

    Egg - I have used a free range egg for this recipe, you could use a large egg too if that is all that you have.

    Flour - I have used plain flour for this recipe, if you had self raising flour you could this too. For a gluten-free option you could use gluten-free flour or almond flour or oat flour.

    Sweetcorn - I have used canned sweetcorn for this recipe. You can use frozen sweetcorn if cooked beforehand, or fresh sweetcorn cooked too.

    Oregano - I have used dried oregano for a bit of extra flavour in the recipe. If you wanted to use mixed herbs or Italian seasoning you can use these as alternatives as well.

    Olive oil - I have used a little oil to coat the pan so that the fritters do not stick to the frying pan.

    Serving suggestion

    The fritters would be great served with a dollop of plain Greek yogurt with a squeeze of lemon. Perfect for little hands to hold.

    The fritters are great for lunch boxes too as they can be kept in an airtight container.

    Storage instructions

    The fritters once cooled, can be stored in the fridge in an airtight container for up to 3 days. If you wanted to reheat the fritters, you will only be able to reheat once from the fridge.

    I would suggest heating them up in the oven on a baking sheet, at 180 degrees, for 15 minutes. Leave to cool before serving to your baby.

    To store in the freezer, leave the fritters to cool and store in an airtight container or in an airtight freezer bag.

    They can be kept in the freezer for up to 3 months.

    Once defrosted you will not be able to re freeze.

    Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Frying pan - I love the non-stick surface of this particular frying pan and it’s suitable for all types of hob.

    These are so yummy as a baby-led weaning lunch or dinner option. Great recipe for toddlers and older kids too.

    Ingredients

    Instructions

    1. Pour the egg, flour and oregano into a large bowl and mix together using a whisk and a fork until a smooth batter is made.
    2. Add in the sweetcorn and mix together until combined.
    3. Heat the olive oil into a frying pan and spoon a tablespoon of the sweetcorn mixture into the frying pan and cook for 3-4 minutes on each side. Repeat until you have made 6 fritters.
    4. Leave the cooked fritters to cool on a plate.

    Notes

    You can use gluten-free flour to make the recipe gluten free.

    Feel free to add in a few other veggies such as peas and grated carrot if you wanted to.
