Ingredient information
Bread - I have used a brioche bread for this recipe, if your little one does not want brioche bread you can always use another sandwich bread such as white or brown bread instead.
Cream - I have used a whipping cream for this recipe, but you can use a double cream/heavy cream instead or a plant based alternative.
Cream cheese - I have used a full fat cream cheese for this sweet sandwich recipe, you can use a plant based alternative too.
Ripe strawberries - I have used fresh juicy sweet strawberries for this recipe which are so yummy within the whole recipe, and as its strawberry season too. Fresh fruit works the best for this recipe rather than frozen.
Serving suggestion
You can serve the strawberry cream sandwich as it comes as a tasty sweet treat for the whole family to try.
You could serve the cream sandwiches alongside extra strawberries and berries such as raspberries and blackberries.
This is a real treat so you could serve on a large platter or board for special occasions.

Storage instructions
The good news is you can make this sandwich ahead of time, as this will keep in the fridge for up to 3 days. But best eaten on the day and wrapped in foil or plastic wrap.
Just be mindful of the best before dates on the ingredients you are using, if you are planning to make this in advance.
You can freeze the cream mixture, you could use an ice cube tray to portion or a freezer bag.
The cream mixture will store in the freezer for up to 3 months.
To defrost the cream leave in the fridge overnight.
Once the cream has been frozen you will not be able to refreeze.

Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

4-Ingredient Strawberries and Cream Sandwich Recipe
A fun treat for the whole family to enjoy. This is my fun take on the viral strawberries and cream sandwich slice.
Ingredients
Instructions
- Start by pouring the whipping cream into a large bowl and using a hand whisk or an electric whisk, whisk together until the cream is really thick in consistency to stiff peaks.
- Add the cream cheese to the whipped cream and mix together until combined.
- Next, take your 2 slices of bread and spoon half the cream mixture on one side of the piece of bread.
- Spread the cream out as best you can to make it a little flatter.
- Place 3 of the the whole strawberries in a diagonal line across the slice of bread.
- Take the last strawberry and cut it in half and place either side of the central strawberry.
- Spoon the rest of the cream filling on top of the strawberries and smooth over.
- Place the other bread slice on top of the cream and wrap the sandwich in foil (uncut).
- Place in the fridge for 1-2 hours.
- Remove from the fridge, open the foil and cut in a diagonal line to make two triangles.
Notes
You can use a dairy free double cream and whip the cream and you can use a dairy free plant based cream cheese for the creamy mix.
Instead of the brioche you can use just plain white bread. This will be suitable for dairy free and vegan diets too.
