    Ingredient information

    Oats - I have used fine rolled porridge oats for this recipe, you can use other oats such as jumbo oats, but if you do for best results follow these simple steps I would highly recommend blitzing them in a food processor as they may not stick together as well.

    Banana - I have used 1 medium mashed ripe banana for this recipe (the best way for flavour), if you do not have a banana loving baby or your baby is allergic, you can add in extra yogurt to the bananas weight.

    Yogurt - I have used a plant based/vegan plain Greek yogurt for this recipe, you can use regular Greek yogurt or a coconut yogurt.

    Serving suggestion

    The oaty flapjacks would be great served with a fruit puree or with a mango pot or drizzled with smooth peanut butter or your favourite nut butter.

    You can simply serve the vegan snack bars on their own as a snack on the go, breakfast on the go or as a lunchbox item that will keep older kids filled up throughout the day.

    Storage instructions

    Once cooled and at room temperature, you can store the flapjack recipe in airtight containers large or small, in the fridge for up to 5 days.

    The bars can be stored in airtight containers or a freezer bag and kept in the freezer for up to 3 months. Great for bringing out when you need them!

    To defrost from the freezer, leave the bars in the fridge overnight. Once defrosted they will keep for 3 days in an airtight container.

    Do not re freeze, once defrosted.


    Equipment used to help with this recipe

    6x6 inch square baking tin - A white ceramic oven to table dish that is dishwasher and freezer safe.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Baking tray - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    These flapjacks are so tasty and baby friendly which is great for baby-led weaning. A yummy lunchbox item for older kids too if you're looking to cut down on sugar.

    Ingredients

    Instructions

    1. Start by preheating your oven to a medium heat of 180 C Fan or 350 F Fan. Over line a small 6x6 inch square tin or baking dish with baking parchment.
    2. Pop all the ingredients into a large mixing bowl and mix until combined. It is quite a thick mixture, so make sure all the ingredients are fully combined.
    3. Spoon the oat mixture into your prepared baking dish on a flat surface, and press down using the back of the spoon, until level.
    4. Pop into the oven for 25-30 minutes until golden brown.
    5. Leave to cool in the dish and then portion into 8 bars.

    Notes

    You can always add other ingredients to this recipe. I use this recipe as a base recipe.

    So for example you could add in a tablespoon of chia seeds and flaxseed.

    Or you can add in some fresh fruit such as blueberries or raspberries.
