Ingredient information
Oats - ready rolled oats/quick oats are a great store cupboard staple that can be used in so many different recipes such as pancakes and muffins. You can of course use gf oats too.
Flour - I have used a little self raising flour to really make the mug cake more cake like which I think it really does. You can use a plain flour/purpose flour or coconut flour instead.
Egg - I have used a medium free range egg which is all this recipe needs to make a great mug cake.
Milk - I have used a whole milk for this recipe but feel free to use a milk of choice.
Baking powder - I have added a little baking powder as a raising agent for this recipe.
Blueberries - I have used blueberries for this recipe but you can use other berries such as raspberries. Great if they are trying them for the first time.
Serving suggestion
The oats would be great served with a mango pot, peach melba, or even just some plain Greek yogurt swirled with a scoop of peanut butter or almond butter with extra squished plump fresh blueberries. The best part is this can be served for breakfast or healthy dessert.
Serve with some fresh fruit such as mashed or whole strawberries if you like with a sprinkling of chia seeds or flax seeds or you can serve with a ripe banana and some ice cream.

Storage instructions
The oatmeal mug cake recipe can be stored in the fridge for up to 3 days, stored in an airtight container. Just make sure you cool the oatmeal bake to room temperature before transferring to the fridge.
If you wanted to freeze the healthy oatmeal recipe, you will need to make sure that the oats have cooled down before transferring to either a freezer bag, airtight container or simply cover with plastic wrap.
Ensure that the bag and airtight container is labelled with the item and the date. I use masking tape to label the airtight container. You could freeze the oats in the ramekin, if the oats have fully cooled down. Wrap in foil, followed by cling film. The oats will store in the freezer for up to 3 months.
To defrost the easy oatmeal mug cake, leave in the fridge overnight to defrost and make sure it is fully defrosted, before re heating.
To reheat, place the defrosted oats in a ramekin in a preheated oven on 180C/350F and reheat on a for 15 minutes. Or you can place in the microwave for 30 seconds. Check the temperature of the oats a few times as you do not want there to be any hot pockets within the oats.
Once the perfectly fluffy oat cake has been defrosted you will not be able to reheat or re freeze.

Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

- Start by adding the oats, baking powder and flour into your mug and mix together.
- Next add in the milk and the egg and mix together well using a fork.
- Once the mixture is fully combined, bury the blueberries into the oat mixture.
- Place the mug into the microwave and cook for 2 minutes 30 seconds.
- Spoon the mug cake into a bowl or place and make sure it is cooled fully before serving to your baby.
Notes
This is a great recipe and can of course be made dairy free, all you will need to do is use a dairy free milk of your choice such as oat milk or almond milk.
You can switch up the fruit used as well and use quartered strawberries or raspberries as alternatives.
