    Ingredient information

    Flour - I have used a plain flour (purpose flour) for the recipe, no need for a self raising flour as the muffins rise perfectly with the ingredients in this recipe.

    Baking powder and bicarbonate of soda - These are a great combination for the perfect rise to the muffins.

    Banana - I have used a mashed banana to add sweetness to the muffins. You could use apple puree instead if you prefer.

    Butter - I have used an unsalted butter for the recipe, you can use a baking butter instead which works just as well, and often baking butters are dairy free.

    Egg - I have added a medium free range egg for the recipe to add a lovely rise to the muffins.

    Milk - I have added a little whole milk to the recipe. You can use a plant based alternative such as oat milk or unsweetened almond milk.

    Cinnamon - I have added a little cinnamon to add a little more flavour and sweetness to the muffins.

    Raspberries - Juicy raspberries add a little pop of extra sweetness and flavour to the muffin recipe, delicious!

    Serving suggestion

    The fluffy muffins recipe would be great served with plain yogurt or Greek yogurt and milled chia seeds.

    You could cut the muffins in half and spread with a little almond butter or cashew butter and serve with fresh fruit such as orange segments and baked apple slices.

    Storage instructions

    Store the raspberry muffin recipe in an airtight container in the fridge for up to 3 days.

    The delicious muffins can be frozen in an airtight container or in a freezer bag for up to 3 months.

    Just make sure the easy muffin recipe have cooled to room temperature before transferring to an air-tight container or freezer bag.

    Be sure to label the freezer bags with the item and date, so it is clear how long they can be stored.

    To label the airtight container I use masking tape this way it will not ruin the airtight container.

    To defrost the homemade raspberry muffins, keep them in an airtight container and defrost in the fridge overnight. Make sure they are fully defrosted before serving.


    Equipment used to help with this recipe

    Silicone cups - I love reusable kitchen stuff! These silicone muffin cases are dishwasher and freezer safe and can be used in the oven up to 230 degrees C! Ideal for individual baby portions.

    Muffin tray - A non-stick muffin pan that will easily clean any spills from the muffin cases. You will need one of these to easily hold the muffin cases.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Large mixing bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    This is a great easy recipe that can be made very easily in one bowl. No added sugar so a great snack or breakfast item.

    Ingredients

    Instructions

    1. Start by preheating your oven to 180C or 350F. Prepare a muffin tray with the muffin liners/muffin cups or paper liners.
    2. Pop all of the ingredients apart from the raspberries into a large bowl and mix together using a spoon.
    3. Once combined add in the raspberries and mix through the cake batter.
    4. Spoon about 2 tablespoons of the muffin batter into each muffin cup and once filled give the tray a little tap on the work surface.
    5. Pop the muffins into the oven. The baking time is 20 minutes until the muffins are golden brown.
    6. Leave to cool in the tin or on a cooling rack and serve.

    Notes

    You can use a gluten free plain flour to make gluten-free muffins for this recipe for gluten free babies. Feel free to use an almond flour as an alternative too, The muffins may not rise as much as if you used flour.

    You can also use a dairy free melted unsalted butter for dairy free babies.

    You can use other fresh berries such as strawberries or blueberries, great for a healthy breakfast.
