    Storage instructions

    The great thing is If you wanted to freeze the peanut butter date energy balls you can and will need to make sure that you have suitable storage.

    If you are freezing individual portions, you can store the in an airtight container or air lock bag. A great way for saving for another day.

    Make sure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.

    To defrost the balls, leave in the fridge overnight and make sure they are fully defrosted.

    Once the balls have been defrosted you will not be able to refreeze.

    Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Baking sheet - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    These peanut butter balls are great for a make ahead snack for baby and toddler. They can be frozen to so a great recipe for batch cooking.

    Ingredients

    Instructions

    1. Pop the rolled oats and the dates into a food processor or Nutri bullet and blitz until smooth. You can add a little water to loosen the mix if needed.
    2. Add the date and oat mixture to a large bowl along with the peanut butter.
    3. Mix together using a spoon until the energy ball mixture comes together like a dough.
    4. Split the dough in 7-8 small pieces and roll into little balls.
    5. Place the small balls on a plate or baking sheet.
    6. Finish by drizzling with a little more peanut butter if you like.

    Notes

    You can use gluten-free oats for this peanut butter energy bites recipe if you prefer for babies with sensitive tummies for the perfect snack.

    Next time you can use a different nut butter such as almond butter, hazelnut butter or cashew butter for this great recipe.

    You can sprinkle with desiccated coconut as an added texture and flavour.

    You may need to pop into the microwave for 30 seconds or so to soften if using these nut butters.
