    Recipes With Desiccated Coconut

    When introducing desiccated coconut, ensure it is finely shredded to minimise choking hazards and mix it with other foods, such as porridge or yoghurt, for added texture and flavour.

    As with all new foods, start with small amounts and observe for any signs of allergies.

    Ingredient information

    Oats - I have used rolled oats for this recipe, I find that these work the best. If you use jumbo oats or larger oats, they may not work within the recipe as they are too big and less dusty.

    If jumbo oats are all you have, you could blitz half of the recipe weight in a Nutri bullet or food processor to oat flour and keep the other half to whole oats.

    Flaxseed - I have added flaxseed for added nutrition to the cookies. Any way I can get added nutrition into a recipe I will.

    Chia seeds - I have added chia seeds for added nutrition too. You could leave this ingredient out if you wish.

    Coconut - I have added coconut for flavour and texture. The coconut works so well within this recipe.

    Greek yogurt - I have used a plain Greek yogurt for these toddler cookies. You could use a plant based alternative for dairy free babies.

    Serving suggestion

    The healthy oatmeal cookies would be great served with plain Greek yogurt or you could serve alongside quartered strawberries, squished blueberries or ripe banana.

    You could also serve with a 100% smooth peanut butter for dipping.

    Storage instructions

    Storing the healthy oatmeal cookie recipe in the fridge cooked:

    All you will need to do is store the baby cookie recipe in an airtight container or a freezer-safe container or even tightly wrapped plastic wrap and keep in the fridge for up to 5 days. Just make sure the cookies are at room temperature before packaging up.

    You can also store the cooked oatmeal cookies in the freezer in the same way for up to 3 months.

    Store the cookies in the freezer raw:

    All you will need to do is place the raw cookies in an airtight container spaced out in the container in a single layer, you will need a large one or you can place on the baking tray wrapped in plastic wrap if you have enough room.

    When you decide to cook the healthy cookies from frozen you will need to cook an extra 5 minutes or so.


    Equipment used to help with this recipe

    Large mixing bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Baking tray - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    These cookies are great for baby and toddler, they have minimal ingredients without the sugar.

    Ingredients

    Instructions

    1. Preheat your oven to 180C or 350F. Prepare a baking sheet with parchment paper.
    2. Pop all of the ingredients into a large bowl and mix together using a wooden spoon.
    3. Bring the ingredients together using your hands to form a large ball (doesn’t have to be neat).
    4. Break about a tablespoon of the cookie dough off, and roll together using your hands.
    5. Press down using both your hands to form a thick looking round cookie shape.
    6. Repeat until you have used up all of the oat dough.
    7. Pop the cookies into the oven for 12-15 minutes until golden brown.
    8. Leave to cool before serving to your baby.

    Notes

    It is really easy to make this recipe gluten-free, all you will need to do is use 100% gluten free oats. Try to get rolled oats as jumbo oats may not work with this recipe.

    To make the recipe vegan, you will need to choose a vegan plant based plain Greek yogurt.
