Ingredient information
Butter - I have used baking butter on this occasion, but melted unsalted butter is a great choice too.
Eggs - I have used free range eggs for this recipe.
Flour - I have used self raising flour for the flour mixture, if you only had plain flour the recipe will still work but will not rise as much.
Baking powder and Bicarbonate of soda - I mostly pair these two ingredients together in cake recipes, makes for a great rise to the cakes that I make.
Fresh apples - I have used Bramley for this recipe, I feel these are great for cooking with an break down really well so perfect for a weaning recipe. The little lady apples are also great flavour wise for this recipe.
Ginger - I have used ground ginger which is the star of the cake, I have not added too much so it is not overpowering for little mouths.
Serving suggestion
The loaf cake is great sliced and eaten on its own, or it is great sliced and spread with a little unsalted butter or cream cheese or nut butters such as smooth peanut butter, cashew butter or almond butter.
You can try a seed butter too such as sunflower seeds butter, with a soft pear, or dipped into a fruit flavoured baby puree.

Storage instructions
The cake can be stored in the fridge for up to 5 days, stored in an airtight container.
If you wanted to freeze the cake you will need to make sure that the cake has cooled down at room temperature.
Once cool, wrap the cake with plastic wrap followed by tin foil and place in the freezer. This is if you are freezing the cake whole.
If you are freezing individual portions, you can store the same way in an airtight container.
Make sure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.
To defrost the cake, leave in the fridge overnight and make sure it is fully defrosted.
Once the cake has been defrosted you will not be able to refreeze.
Equipment used to help with this recipe
2lb Loaf tin - A rectangular, non-stick 2lb loaf tin that is dishwasher safe and ideal for my bread and loaf cake recipes.
Loaf liners - Paper loaf pan liners are a great idea, particularly when you're in a hurry. Saves greasing your pan and cutting parchment paper to size.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

Apple Gingerbread Cake Recipe For Baby Led Weaning
A very yummy seasonal cake recipe without the sugar. This would make a great Halloween smash cake recipe for a 1st birthday party.
Ingredients
Instructions
- Start by preheating your oven to 180C or 350F. Prepare a loaf cake tin with a loaf liner and set aside.
- Add the melted butter, eggs, baking powder, bicarbonate of soda, flour and ginger into a large mixing bowl and mix together using a spoon.
- Next add in the cubed apples and mix together.
- Spoon into your prepared loaf tin and smooth over using the back of a spoon.
- Pop into the oven for 30 minutes until golden brown.
- Check the cake is cooked through by using a skewer in the centre of the cake. If the skewer comes out clean the cake is cooked through.
- Leave to cool before serving to your baby.
Notes
If you wanted to make the recipe dairy free, you can use a dairy free butter. If you check the baking butter you are using, most baking butters are dairy free so check the label.
If you wanted to make the recipe gluten-free you can use a gluten free self raising flour.
