    Ingredient information

    Banana - This recipe works with easily mashed bananas.

    Blueberry - Instead of blueberries you could use raspberries or strawberries instead.

    Oats - I have listed some alternatives to oats at the bottom of this post. To make the recipe 100% gluten-free you could use gluten free rolled oats (blitzed) instead.

    Vegetable oil - This is the egg replacement, A small amount is needed.

    Apple puree (apple sauce) - I have used apple puree from a baby food pouch, but you could make your own apple puree from cooked apples too.

    Baking Powder - The cake needs a little raising agent, the baking powder does the job!

    Serving suggestion

    This would be great served with a Fro Yo Cherry or with some Yogurt Bark.

    Storage instructions

    The cake can be stored in the fridge for up to 3 days, stored in an airtight container.

    If you wanted to freeze the cake you will need to make sure that the cake has cooled down at room temperature. Once cool, wrap the cake with cling film followed by tin foil and place in the freezer. This is if you are freezing the cake whole.

    If you are freezing individual portions, you can store the same way in an airtight container. Make sure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.

    To defrost the cake, leave in the fridge overnight and make sure it is fully defrosted.

    Once the cake has been defrosted you will not be able to refreeze.


    Equipment used to help with this recipe

    Baking dish - A square rust-resistant non-stick baking tin - very versatile and can be used for your cake bakes or roasting meat and veg!

    Large mixing bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Baking sheet - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Recipe | Banana & Blueberry Cake

    Ingredients

    Makes 4 fingers

    • 83g mashed bananas

    • 83g rolled oats, blitzed

    • 35g blueberries

    • 83g vegetable oil

    • 2 tablespoons apple puree

    • 1 teaspoon baking powder

    Instructions

    • Start by preheating your oven to 180C or 350F. Line a 9x9 inch dish with parchment paper.

    • Mash the bananas in a large bowl, and add in the rest of your wet ingredients (vegetable oil, apple puree) Stir well.

    • Next add in the dry ingredients, the oats and baking powder, followed by the juicy blueberries. Stir well.

    • Pour the smooth batter into your prepared baking dish, level using a knife and pop into your preheated oven for 30 minutes.

    • Transfer to a wire rack and leave to cool at room temperature before serving.

    Recipe notes

    This healthy “banana bread” recipe can have easy swaps if you wanted to use different types of flours. Instead of the ground oat flour you could use, gluten free flour, almond flour, coconut flour. If you use the gluten free flour, add in 1/2 teaspoon of bicarbonate soda (baking soda)

    The delicious cake recipe could also be made into banana muffins by using a muffin tin. They will make 6 muffins using this recipe. Or if you quadruple the recipe you could use a cake pan to make a delicious cake recipe. Or you could use a loaf pan! It really is up to you!

    Instead of the vegetable oil you could use olive oil coconut oil (will not make the recipe nut free) or avocado oil.

    For best results, If you measure the ingredient amounts exactly the cake will turn out great!
