Can I Use Frozen Rhubarb

To achieve the desired texture, you may need to drain the rhubarb before blitzing it into a smooth puree or thick sauce.

Rhubarb - We love the rhubarb plant in our house, but I do get that you can either love it or hate it! You could use any stewed fruit within this recipe such as plums, Bramley apples or Peaches.
Greek yogurt - I have used a plain Greek full fat plain yogurt that is perfect for baby as it is low sugar with no additives or lots of added sugar.
Serving suggestion
The rhubarb recipe would be great served on its own, it can be a great breakfast recipe on the go for those busy mornings! Or it can be made ahead of time and kept in the fridge overnight until the morning.
If like me, you look for low sugar desserts for your toddler, this is a great seasonal rhubarb dessert option too that looks really pretty.
You can also use wine glasses if serving for adults for a fancy looking dessert. You can finish by drizzling the rhubarb juice over the top. The perfect balance for baby and adults, I love it when we all can have the same thing to eat makes things so much easier!

Storage instructions
This can be stored in the fridge for up to 3 days, just be mindful of the best before date of the yogurt, if it is up in during those 3 days it may not be ok to serve to your little one.
You could save half of the yogurt for the next day, as it is a large portion. That would be ok too. It is possible to serve the pots at room temperature.
It is possible to freeze the pots, they can be frozen for up to 3 months. You can also use ice cube trays to portion the rhubarb puree to store in the freezer.
Make sure you leave the pots overnight in the fridge before serving, makes for a frozen treat too to replace a vanilla ice cream if you wish.
Equipment used to help with this recipe
Kilner jars - These are snack sized glass pots with easy push-on silicone lids which are water tight and leak-proof making them ideal for carrying light bites and snacks on-the-go.
Nutri bullet - I have found a blender to be an invaluable tool in the preparation of many of my baby led weaning recipes.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Saucepan - So many pan sets out there but I particularly like to use pans with a non-stick surface for ease of cleaning and ones that are suitable for different types of hob surface.

Easy Pureed Rhubarb Fool Recipe For Baby and Toddler
This is a great way to introduce rhubarb to baby or it can be great as a meal on the go.
Ingredients
Instructions
- Start by washing the rhubarb. Using a sharp knife cut the rhubarb into medium cubes, and pop the chopped rhubarb into a saucepan with a splash of water and the fresh orange juice if using. Using the orange takes away the sharpness of the rhubarb but not necessary to use.
- Cook the fresh rhubarb covered in a small pot on the stove top on a medium heat. The cooking time will be 10-15 minutes.
- Once cooked, pop the stewed rhubarb into a Nutri bullet or food processor and blitz until smooth you have a rhubarb purée. You can leave some pieces not blitzed too for added texture.
- Next, take your kilner jar or container or bowl you are using, and layer up the pot. Start with 2 tablespoons of the rhubarb mixture and then 2 tablespoons of the yogurt. Repeat until you have filled the pot.
- You can serve right away or pop into the fridge until you need to use. (will store for up to 3 days in the fridge).
Notes
You can use a dairy free plain Greek yogurt for this recipe to make the recipe dairy free/vegan.
Feel free to add chia seeds or flaxseed to the yogurt for added nutrition.
Feel free to use a little bit of the orange zest too or you can use a squeeze of lemon juice and a little lemon zest. A great way to take away the tangy taste.
