Baking butter - I have used baking butter and it works perfectly well in a cookie recipe. You can also use a unsalted butter block butter at room temperature if you like. It may be easier to use an electric whisk or mixer if you decide to use block butter.
Light brown soft sugar - Soft brown sugar is great for baking, you could use a mixture of soft brown sugar and granulated sugar, 50-50 of each as per the recipe for a slightly different texture.
Plain flour - I have used plain flour as I did not want the cookies to rise and spread once baked. So it is important to use plain flour.
Oats - I have added rolled oats for nutrition and a great ingredient for lactation, you could use old-fashioned oats too. They also had a great flavour and texture. You could blitz them to oat flour if you wanted a smoother texture. To make the cookies gluten free lactation cookies you can use gluten free oats and gluten free plain flour.
Egg - I have used 1 egg for this recipe as this is all the recipe needs for the yummiest cookie.
Flaxseed - I have added ground flaxseed for nutrition and omega 3.
Chocolate chips - I have used dark chocolate chips for the recipe but you can use milk chocolate chips or a mix of the both.
Dates - I have chopped dates for added sweetness and goodness to the cookies.

Baking tray - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

The Best Oat Cookies For Lactation With Chocolate
These cookies are so tasty and this one is for the Mama's who need a tasty sweet treat for the night feeds.
Ingredients
Instructions
- Start by preheating your oven to 180C or 350F. Line a baking tray with parchment paper and set aside.
- Place the butter and the brown sugar into a large bowl (you can use an electric mixer on a medium speed, cake mixer with the paddle attachment or food processor). Using a spatula mix them together until combined and fluffy.
- Next add in the egg and mix together.
- Add the flour and the oats to the mixture and mix until combined.
- Add the flax seeds, dates and chocolate chips and mix together. You will end with a cookie dough type consistency.
- Split the mixture into 8 pieces using a cookie scoop and roll into balls.
- Place on the baking sheet leaving space between each cookie. You can use 2 trays if you prefer.
- Pop the baking tray into the oven for 15-20 minutes until golden brown.
- Once cooked leave to cool for 15 minutes on the tray.
Notes
Feel free to switch the dark chocolate chips for milk or white chocolate chips or a mix of all three. I prefer the dark chocolate as the bitterness of the chocolate works so well alongside the dates.
You can also add pumpkin seeds and sunflower for nuttiness and texture.
