    Black beans - I have used black beans as these are great as a plant based or vegetarian protein for baby and toddler for this perfect finger food.

    Cumin and Coriander - I have used ground cumin and coriander which are lovely mild spices for baby for baby led weaning.

    Garlic - I have used garlic granules/garlic powder instead of fresh garlic. You can use a fresh grated garlic clove instead.

    Mozzarella - I have used a mozzarella cheese for the recipe as it is a mild cheese for baby. You can use a cheddar cheese instead if you like.

    Soft flour tortillas - Soft tortillas are great for baby led weaning and a great main ingredient for this quesadilla recipe. They can be used in so many different recipes such as a lasagne recipe or a a nacho recipe.

    Serving suggestion

    The great thing is the quesadillas can be eaten on their own as a complete easy meal and tasty lunch, or they can be served with other items to make a more substantial meal if needed.

    Broccoli florets are a great addition to the meal along with some cucumber and pepper batons for dipping.

    You can serve the bean quesadillas with a little shredded cooked chicken and mashed avocado bread or add it into the quesadilla and make chicken quesadillas.

    For a sweet treat you could try serving a mango pot, strawberry dessert or a cheesecake!

    Storage instructions

    The cheese quesadillas can be kept in the fridge in an airtight container for up to 3 days.

    They can be stored in an airtight container in the freezer for up to 3 months.

    If you are wanting to heat them up from frozen, make sure they are fully thawed by leaving in the fridge overnight in an airtight container.

    They can be reheated in the oven on 180C or 350F for 7-10 minutes (top with more cheddar cheese for extra ooziness!).


    Equipment used to help with this recipe

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Saucepan - So many pan sets out there but I particularly like to use pans with a non-stick surface for ease of cleaning and ones that are suitable for different types of hob surface.

    Frying pan - I love the non-stick surface of this particular frying pan and it’s suitable for all types of hob.

    Easy BLW Quesadilla Veggie Recipe From 6 Months Old

    This is a great quick lunch or dinner idea perfect for baby and and toddler. The recipe is very easy to make vegan and dairy free.

    Ingredients

    Instructions

    1. Start by adding the black beans to a medium saucepan, along with the cumin, coriander and garlic granules.
    2. Mix the beans and turn on the heat to a medium heat and cook for 5 minutes or so.
    3. Add in 100ml of hot water and cook for a further 10 minutes or so.
    4. Using a potato masher or a fork, mash the beans until you have a thick mashed bean consistency.
    5. Next take your tortilla and spread half the mashed bean mixture onto one side of the tortilla.
    6. Sprinkle the beans with half of the cheese and fold over the other side of the tortilla and press down.
    7. Take a large frying pan and turn onto a medium heat. Place the tortilla onto the frying pan and cook on a high heat for 2 minutes on each side until golden brown.
    8. Repeat using the other tortilla or you can freeze the black bean mixture.

    Notes

    If you wanted to use other canned beans for the recipe, cannellini beans, pinto beans or kidney beans would be a great option for the recipe.

    You can try using a dairy free grated cheese to make the recipe dairy free and vegan.
