    Great Recipe For Gluten Free Babies

    This two-ingredient recipe of banana and egg is an excellent choice for gluten-free babies, as it naturally contains no gluten, making it safe for little ones with gluten sensitivities or celiac disease.

    The banana provides a naturally sweet flavour and essential nutrients, while the egg introduces a source of protein, supporting healthy growth and development.

    Ingredient information

    Egg - I have used a medium free range egg for this recipe, but you can use large eggs too.

    Great to add a little more protein into babies diet. Great if your little one does not like eggs cooked on their own.

    Single banana - I have used a large banana that is overripe for this recipe, I find they mash easily and they have the most flavour, great for this recipe.

    Unsalted butter - I have used a little unsalted butter so that the pancake does not stick to the pan, you could use coconut oil or a vegan spread if you prefer to make the recipe suitable for vegan and plant based babies.

    Serving suggestion

    The delicious pancakes would be great served with plain natural yogurt or plain Greek yogurt.

    You can also try adding a little ground cinnamon to the pancake mix to add a little more flavour.

    You could also serve with optional ingredients like quartered berries such as strawberries, extra banana slices, blackberries or raspberries for a yummy breakfast recipe.

    Storage instructions

    The good news is that the 2-ingredient banana pancakes can be frozen for up to 3 months in the freezer if you have any pieces leftover. They can be stored in a freezer bag or a an airtight container.

    If you are making more than one banana egg pancakes, store in the airtight container the best way to do this is layer the pancakes in between parchment paper. You could also store in individual small airtight containers if this is easier.

    If you are storing in the fridge the pancake can be kept in an airtight container for up to 5 days.

    To defrost and reheat, what you will need to do, is take out the pancake from the freezer and place in the fridge overnight to fully thaw.

    Once thawed the pancake can be enjoyed cold, or you can reheat in the oven on 180C or 350F for 5 minutes.

    Check that the pancake is hot all the way through, and leave to cool at an acceptable temperature for your baby.


    Equipment used to help with this recipe

    Frying pan - I love the non-stick surface of this particular frying pan and it’s suitable for all types of hob.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Medium bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    This is a great pancake recipe the whole family can enjoy using just 2 ingredients. Great for gluten-free babies.

    Ingredients

    Instructions

    1. Start by preheating your oven to a medium heat of 180C or 350F.
    2. Next add the banana to a bowl and mash the banana using a fork.
    3. Add in the egg and mix together using the fork until combined. You can use a Nutri bullet or food processor to get a smooth consistency if you prefer.
    4. Heat a small frying pan to a medium-low heat with the butter on the hob, turn off the heat once melted.
    5. Pour in the pancake mix and pop into your preheated oven for 15 minutes until golden brown.
    6. Once cooked using a thin spatula transfer the pancake onto a plate and cut into strips and leave to cool before serving to your baby.

    Notes

    You can use a dairy free/vegan spread instead of unsalted butter to make the recipe vegan and dairy free.

    Why not try adding in some blueberries or raspberries to the mix. A great way to make this a yummy complete meal.
