    Rolled oats - These are great in a breakfast recipe, they are the perfect start to the day, and great for those busy mornings.

    They are a great addition to this simple muffin recipe. The rolled oats can easily be made into an oat flour too, by blitzing in a food processor.

    Banana - You can use overripe bananas for this recipe as they are very easy to mash to get a great mashed banana.

    Baking powder - A little raising agent to make the muffins rise.

    Serving suggestion

    The 3 ingredient banana muffins is such an easy recipe and are great served on their own, or with a dollop of Greek yogurt and fresh fruit.

    You could serve the muffins as part of an easy breakfast with a mango pot, or chia seed pudding.

    Why not try spreading one half of the fluffy muffins with peanut butter or almond butter for added protein.

    The muffins are great for lunch boxes or as a quick snack as they can be eaten at room temperature, you could pack with chicken nachos or a broccoli pizza.

    Storage instructions

    Store the muffins in an airtight container in the fridge for up to 3 days.

    The banana and raspberry muffins can be frozen in an airtight container or in a freezer bag for up to 3 months.

    Be sure to label the freezer bags with the item and date, so it is clear how long they can be stored.

    To label the airtight container I use masking tape this way it will not ruin the airtight container.

    To defrost the muffins, keep them in an airtight container and defrost in the fridge overnight. Make sure they are fully defrosted before serving.


    Equipment used to help with this recipe

    Muffin tin= A non-stick muffin pan that will easily clean any spills from the muffin cases. You will need one of these to easily hold the muffin cases.

    Silicone cups - I love reusable kitchen stuff! These silicone muffin cases are dishwasher and freezer safe and can be used in the oven up to 230 degrees C!

    Ideal for individual baby portions.

    Airtight container - I much prefer the click-shut lids on these containers compared to others.

    They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Large mixing bowl - I like to use a stainless steel mixing bowl - they are usually lightweight and easy to clean.

    Nutri bullet - I have found a blender to be an invaluable tool in the preparation of many of my baby led weaning recipes.

    Recipe | No Sugar, Vegan 3-Ingredient Oaty Banana Muffins

    Ingredients

    Makes 5 muffins

    • 2 bananas, 160g

    • 100g rolled oats

    • 1/2 teaspoon baking powder

    Instructions

    • Preheat your oven to 180C or 350F, and prepare your muffin pan and silicone cases or paper liners.

    • Start by blitzing the rolled oats in a food processor or Nutri Bullet until you get your oat flour.

    • Mash the 2 large bananas in a large bowl, add the dry ingredients, the oat flour and the baking powder and mix.

    • Spoon a tablespoon of the mixture into each silicone case and sprinkle with a few rolled oats if you wish.

    • Pop in your preheated oven for 20 minutes, until golden brown.

    • Leave to cool on a cooling rack.

    Recipe notes

    You could add in a 1/4 teaspoon cinnamon or a pinch of nutmeg.

    You can also add in extra fruit to the muffins such as blueberries or blackberries, for a great healthy snack.

    You could make this recipe into mini muffins too, all you will need is a silicone muffin tray.
