    Ingredient information

    Puff pastry - I have used ready rolled puff pastry for convenience and it is great as an alternative to making your own! The baking paper that comes with the pastry is useful to keep for blind baking pies!

    Cheddar cheese - I have used cheddar cheese as I always have cheddar cheese in the fridge, you could use a Red Leicester cheese, double Gloucester or mozzarella. Any pasteurised hard cheese will work with this recipe.

    Cream cheese - Cream cheese is another great versatile cheese to have in the fridge, it is great for sauces, spreads or dips!

    Chives - I love to keep some dried chives in the cupboard to use when needed. You can of course use fresh chives. But equally you do not have to use them at all.

    Serving suggestion

    The cheese stars are a great snack will be great served with a mango pot, a blackberry cheesecake or even some roasted carrots or spinach and egg fingers.

    Storage instructions

    The cheese stars can be stored in the fridge for up to 3 days, stored in an airtight container.

    If you wanted to freeze the cheese stars, you will need to make sure that the cheese stars have cooled down to room temperature before transferring to either a freezer bag or airtight container. Ensure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.

    To defrost the cheese stars, leave in the fridge overnight and make sure that they are fully defrosted, before re heating.

    To reheat, place the cheese stars in a oven proof dish and reheat 180C/350F for 4-5 minutes.

    Once the cheese stars have been defrosted you will not be able to reheat or refreeze.

    Equipment used to help with this recipe

    Baking sheet - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use. 

    Masking tape - After much experimenting with different types of labels, I found that masking tape works the best and is less expensive than some of the labels and stays stuck down even when frozen.

    Star cutters - Choose the stainless steel ones, they are food safe and strong enough to cut through pastry as well as biscuit dough.

    Recipe | Puff Pastry Cheese Stars

    Ingredients

    Makes 3 stacks of stars

    • 1/2 packet ready rolled puff pastry sheet (160g)

    • 50g mature cheddar cheese, grated

    • 2 teaspoons full fat cream cheese

    • 1 teaspoon dried chives (optional)

    Instructions

    • Pre heat oven to 180C Fan or 350F Fan. Line a baking sheet with greaseproof paper or parchment paper.

    • Get your sheet of puff pastry, Use the largest cookie cutter of your star shapes or your shapes of choice. Press 3 of the largest star cutter shapes into the pastry. (keep them close together). Use a rolling pin to roll out the pastry if you are not using ready rolled puff pastry. You could also use a a little flour on a floured surface if you wish.

    • Next use star cutter shape number 2 to press 3 stars, and then followed by the smallest cutter shape to cut 3 stars.

    • Lay all the star shapes on the prepared baking sheets and sprinkle over the cheese.

    • Pop in the oven and bake for 15-20 minutes, until golden brown.

    • Leave the stars to cool slightly on the tray, you do not need a wire rack.

    • Once cooled, pop a little cream cheese in the centre of the largest star, and place the middle star on top, pop a little more cream cheese on the middle star and place the smallest star on top until you have a stack of stars. repeat with the other stars to make 3 stacks.

    • Sprinkle the chives over the stars if using.

    You could use a gluten free ready rolled puff pastry to make the recipe gluten free!

    You could also choose to use a vegan cheese and vegan cream cheese to make the whole recipe vegan.

    Choose a vegan pastry if you would like to make the recipe vegan.
