    These are so fun!

    Who remembers those fried egg sweets from the pic ‘n’ mix? This is what they remind me of!

    I thought this “fried egg puddle” recipe would be super super easy to make with little error to go wrong and that’s the kind of recipes we all like!

    I have used a mango purée pouch for the “egg yolk” as I was only using a little amount! I thought this would be the perfect colour against the white yogurt to make sure it actually looked like a fried egg!

    If you wanted to make the mango purée yourself, all you would need to do is blitz up a slice of peeled mango with a dash of water until smooth.

    I also use full fat Greek yogurt for this recipe, as if you use a fat free version there is more likely to be added sugars and sweeteners so the full fat version is definitely better for your little ones and for yourselves!

    These are soo easy to make and your little ones will really enjoy them for a snack in the summer sun, or as a dessert after dinner!

    They are great for teething gums too!

    Ingredient information

    Natural style Greek yogurt - I mean it when I say this is an absolute staple in our home! The benefits are great! I only give my son Greek yogurt as it is low in sugar and always enjoyed by him!

    Mango purée - I love the fact that mango purée mirrors egg yolk so well! Works perfectly for this recipe.

    Serving suggestion

    These can be served on their own as a fun snack outdoor snack! Or as part of a dessert after a main meal. If you did want to serve them with anything, I would suggest some strawberries. If you leave the puddles at room temperature for a few minutes they will be able to sit in a bowl with the strawberries and eaten with a spoon.

    Storage instructions

    These can be kept in the freezer for storage in freezer bags or an airtight container. They can be kept in the freezer for up to 3 months.

    Makes 9 puddles

    • 9 teaspoons natural style Greek yogurt

    • 2 1/4 teaspoons mango purée

    Instructions

    1. Tear a sheet of baking parchment and line a baking tray.

    2. Pop a teaspoon of the yogurt on the baking sheet and press down slightly with the back of the spoon.

    3. Space out the other 8 puddles on the baking sheet.

    4. Next pop a 1/4 of the mango purée in the centre of each puddle.

    5. Pop in the freezer and freeze for a minimum of 3 hours. Overnight is best!

    If you wanted to make this recipe dairy free, I would highly recommend the Koko Greek yogurt, Cocos Organic natural yogurt or The Coconut Collab yogurt! The coconut really complements the mango too! So win-win!
