    Can Babies Eat Rice Cakes

    Yes, and do you ever struggle with snack ideas for your little ones?

    I always find my toddler wanting a snack all the time, and I really don’t want to give him sugary sweet treats for that sweet tooth any time of day.

    One of my favourite things to do is to create healthy snack options for my toddler and for all the family.

    My son loves a rice cake, so I thought why not try to recreate a rice cake snack that was easy and fun to make, that he will enjoy!

    I have used rice cake from Sainsbury’s linked below, as these have no added salt which is great!

    I love using peanut butter powder when I’ve run out of peanut butter! I find that the powders work the best to grip to the rice cakes as a fun serving of food.

    These are so tasty and are a great snack option for your little ones especially if they like the taste of jelly sandwiches.

    Ingredient information

    Rice cake - The rice cakes I use are these ones from Sainsbury’s, These are great as they have no added salt! Gluten free too!

    Peanut butter powder - I bought this from Holland and Barrett, it’s great to have in the cupboard if you ever run out of peanut butter, and it’s great for using in recipes like this! You can use cocoa powder as an alternative for older kids.

    Freeze dried strawberries - I only discovered these a few years ago, and they are so effective and delicious in so many recipes! You could also pop in some coconut flakes as well or just these if you did not have the freeze dried strawberries or use strawberry puree.

    Butter - I always use unsalted butter as there is no added salt. As a vegan alternative you could use coconut oil (melted).

    Serving suggestion

    These are obviously great on their own, but you could serve with some Greek style yogurt for dipping as a substantial snack or some strawberry purée for an extra strawberry hit!

    why not spread or dip in other nut butters such as cashew butter, sunflower seed butter, hazelnut butter and almond butter.

    Storage instructions

    The rice cakes can be kept in an airtight container in a dry spot at room temperature for up to 5 days. If you wanted to keep them in the fridge you could too!

    It is best not to freeze the rice cakes, they may go soft, therefore the quality may not deliver!

    These are great for baby and kids who need a yummy treat! they taste just like a pb&j sandwich.

    Ingredients

    Instructions

    1. Firstly melt the butter in a microwave friendly dish and microwave for 30 seconds or until melted.
    2. Break up your rice cakes how you want to a medium bowl, I break them up randomly.
    3. Add in the melted butter, peanut butter powder and strawberry powder and mix peanut butter mixture!
    4. That’s it!

    Notes

    You can use your dairy free butter of choice, to make these dairy free and vegan friendly!

    I would suggest the Flora unsalted vegan butter block.

    You can add in some more wholesome ingredients such as whole grain oats or other whole grains for added nutrition.
