    Can I Make This Recipe If I Do Not Own A Slow Cooker?

    Yes, you can still make this beef stroganoff recipe even if you do not have a slow cooker. Instead, you can cook it in the oven at 170°C for 3-4 hours.

    Slow cooker recipes are great as the slow cooking process will still allow the flavours to meld together and the beef to become tender.

    Simply use an oven-safe pot or dish, cover it tightly with foil or a lid, and let it slowly cook to perfection in the oven.

    This method will still result in a delicious and hearty beef stroganoff, a classic comfort food that you can enjoy with your family.

    Ingredient information

    Onion - I have used a red onion, but you could use a white onion as well, or half and half!

    Garlic - I have used fresh garlic but you could use garlic paste (2 teaspoons) or garlic powder (2 teaspoons).

    Diced beef - I have used diced beef, but you can use most cuts of beef in this recipe.

    The reason being when the beef is slow cooked the meat becomes tender and manageable to eat for little ones.

    Mushrooms - I used frozen mushrooms in this recipe, but you can use your mushroom of choice.

    Dijon mustard - You can use a whole grain mustard instead!

    Tomato purée - This adds a depth of flavour and compliments the creamy sauce.

    Stock cube - I use a zero salt beef stock cube, just as tasty but without the salt for your baby.

    Black pepper - A little black pepper is used to season the stroganoff.

    Dairy free sour cream - You could use a dairy free Greek yogurt too, instead of the dairy free sour cream.

    Serving suggestion

    The beef stroganoff is a great recipe served with creamy mashed potatoes, brown rice, egg noodles, spaghetti squash, cauliflower rice, tagliatelle or penne!

    Serve with vegetables such as broccoli, carrot, green beans, sweet potatoes or peas!

    Why not try with sweet potato fries, courgette fries or finish off with a blackberry cheesecake or apple oat slice!

    Storage instructions

    The beef stroganoff can be stored in the fridge for up to 3 days, stored in an airtight container.

    If you wanted to freeze the beef stroganoff, you will need to make sure that the stroganoff has cooled down before transferring to either a freezer bag (carefully) or airtight container.

    Ensure that the bag and airtight container is labelled with the item and the date. I use masking tape to label the airtight container.

    To defrost the beef stroganoff, leave in the fridge overnight and make sure that it is fully defrosted, before re heating.

    To reheat, place the defrosted stroganoff in a saucepan and reheat on a medium heat for 15 minutes.

    Once the stroganoff has been defrosted you will not be able to reheat or re freeze.


    Equipment used to help with this recipe

    Slow cooker - A slow cooker is well worth the investment. I use one that has a non-stick removable pan for ease of cleaning, and an in-built timer.

    Slow cooker liners - Food safe liners, disposable and BPA free - these are a great idea for lining the slow cooker pot.

    Airtight container - I much prefer the click-shut lids on these containers compared to others.

    They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Recipe | Dairy-Free Slow Cooker Beef Stroganoff (Gluten Free)

    Ingredients

    Makes 6 small portions

    • 1 red onion, diced

    • 2 fresh garlic cloves, grated or crushed

    • 400g diced beef stew meat

    • 100g sliced mushrooms

    • 2 tablespoons tomato purée

    • 1 teaspoon Dijon mustard

    • 1 zero salt beef stock cube + 300ml hot water

    • Grind of black pepper

    • 150ml dairy free sour cream or dairy free Greek yogurt

    Instructions

    • Prepare your slow cooker, I line the slow cooker with a slow cooker bag.

    • Add the onion, garlic, beef, mushrooms, tomato purée, black pepper, mustard, stock cube and water to the slow cooker and mix using a spoon. Only a few minutes of prep time.

    • Turn the slow cooker onto to a medium-high heat on high for 3-4 hours or low for 6-8 hours.

    • Once the time is up and the meat is tender, add in the sour cream or yogurt and stir.

    • Serve once cooled slightly.

    Recipe notes

    As a garnish you can use fresh herbs, such as fresh parsley for this classic dish.

    If you wanted a sauce with a thicker consistency, you could use a little corn flour (corn starch) to thicken the sauce.

    Alternatively, if you do not have a baby or a family with a dairy intolerance, you could use double cream (heavy cream) or cream cheese instead of sour cream for this hearty meal.
