Baby Prep Pancakes - Freeze Until Ready to Use

A great recipe if you and your little one loves pancakes!
I love this recipe, as you have pancakes ready to make whenever you want them!
Imagine, waking up in the morning and you are wondering what you can give your little one’s in the morning that isn’t their usual breakfast, cue pre prepared pancakes!
I will say that I have made these pancakes extra large, as I have used extra deep ice cube trays.
If you wanted to make smaller pancakes all you will need to do is get a couple of smaller in depth ice cube trays and fill as per the recipe details.
The smaller pancakes can cook in half the time if this suits you better! We just love large pancakes in our home!
I also love the fact these pancakes are delicious without any added sugar or syrups. The small amount of fruit sweetens the mix up nicely, especially the blueberries they work particularly well.
These are such a great recipe to have in your bank when you want to have a go to pancake recipe that you can batch and store in your freezer ready to cook from frozen!
Ingredient information
Plain flour - I have used plain flour as I find this is best for this recipe. I didn’t want too much of a rise.
Free range egg - I use free range eggs within my recipes.
Whole milk - I have used whole milk as my son is under 2, but you can use skimmed, semi skimmed or even a plant based milk.
Baking powder - I have used a touch of baking powder so that the pancakes are not ‘as flat as pancakes’.
Cinnamon - This is optional but we love cinnamon in our pancakes.
Blueberries - I find blueberries in pancakes are so delicious, so I had to incorporate into these. My son loves them to do it was a no brainer.
Strawberries - Another one of my son’s favourites. So I had to include and like the blueberries work so well with pancakes.
Serving suggestion
You could serve these delicious pancakes alongside, Greek yogurt, strawberries and blueberries. Or you could serve the pancakes on their own. The fruit In the pancakes is enough to add pops of flavour to the pancakes.
Storage instructions
The pancake mix in the ice cube tray can be kept in the freezer for up to 3 months. Once you have cooked a pancake from the ice cube tray they will need to be eaten on the day.
Recipe | Baby Prep Pancakes
Makes 8 prep pancakes
400g plain flour
2 free range eggs
500ml whole milk
2 teaspoons baking powder
1 teaspoon cinnamon (optional)
16 blueberries
3 Strawberries, chopped into small chunks
Instructions
Pop all the ingredients into a large mixing bowl and whisk with a fork.
Carefully pour into a jug.
Pour the mixture into the large ice cube moulds.
Top half of the pancake mix with blueberries and the other half with the chopped strawberries.
Pop in the freezer and take out when you are ready to have a delicious pancake.
To cook the pancakes!
Remove one of the frozen cubes (leave out for one minute and you may need to use a knife to loosen the edges)
Pop a knob of unsalted butter into a frying pan (a frying pan with a lid would be good)
Once the butter has melted, pop the cube in the pan.
Press down the cube using a spatula.
Pop the lid on, and cook for a minute or so.
Press down with a spatula again, and repeat the process.
The cooking time is 6 minutes on each side.
These are quite large pancakes so 1 per toddler is enough.

Recipe notes
If you wanted to make the pancakes plant based you absolutely could by swapping out the milk for a plant based milk, and swapping the egg for coconut oil.
