    Avocado - Avocado is a great staple in our home, packed with nutrients and healthy fats, it also compliments eggs in most recipes.

    Red pepper - I have used a red pepper (bell pepper) from a jar but you can use a fresh raw red pepper if you like.

    Cook the red pepper in the oven. See how below in the recipe.

    Mozzarella - I have used mozzarella but you could use cheddar cheese or a combination of the both.

    Olive oil - You could use a cooking olive oil spray or unsalted butter would work really nicely too.

    Serving suggestion

    The omelette would be great served with a selection of cucumber extra grated cheese, a tomato sauce for dipping or a homemade ketchup.

    Potato smiles or sweet potato crisps would also be a great addition to compliment this recipe.

    Storage instructions

    The omelette can be stored in the fridge for up to 3 days, stored in an airtight container.

    If you wanted to freeze the omelettes you will need to make sure that the omelettes have cooled down before transferring to either a freezer bag or airtight container.

    Ensure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.

    To defrost the omelette, leave in the fridge overnight and make sure that they are fully defrosted, before re heating.

    To reheat, place the omelette in an oven proof dish and reheat on a medium heat on 180C/350F for 10 minutes. Check they’re not too hot before serving.

    Once the omelettes have been defrosted you will not be able to reheat or refreeze.

    Frying pan - I love the non-stick surface of this particular frying pan and it’s suitable for all types of hob.

    Airtight container - I much prefer the click-shut lids on these containers compared to others.

    They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Nutri Bullet - I have found a blender to be an invaluable tool in the preparation of many of my baby led weaning recipes.

    Medium bowl - I like to use a stainless steel mixing bowl - they are usually lightweight and easy to clean.

    Ingredients

    Makes 2-4 portions

    • 1 tablespoon olive oil or cooking spray

    • 2 eggs

    • 1/2 avocado, mashed

    • 1/2 red pepper

    • Handful mozzarella cheese

    Instructions

    • Start by beating the eggs in a small bowl using a fork or a whisk, and set aside.

    • Next Take your red pepper, I have used a roasted red pepper from a jar, (you could roast a raw red pepper (bell pepper) yourself, in the oven on 180C or 350F, for 45 minutes).

    • Blitz the red pepper in a food processor or Nutri Bullet and set aside in a medium bowl.

    • Heat the olive oil in a frying pan on a medium high heat. Pour the uncooked egg into the frying pan, turn down the heat a little bit.

    • Cook the eggs for 2-3 minutes until the egg is cooked underneath and on top.

    • Turn down the heat until you reach a low heat.

    • Sprinkle the cheese over the eggs, next spoon the blitzed pepper and spread out evenly, using a spoon. Finally spoon the mashed avocado onto the omelette and spread out evenly, using a spoon.

    • Roll the omelette from one side to the other, cut into 6 pieces and serve. Season with black pepper if you like.

    Other ingredients that would work really well within this recipe: Cheddar cheese instead of mozzarella or both, Vegan cheese would work well too.

    Coconut oil instead of olive oil.

    The addition of fresh basil.

    Tomato sauce for dipping.

    Mashed black beans instead of red pepper.

    Avocado slices instead of mashed avocado.

    Fresh spinach instead of avocado.

    Cream cheese instead of mozzarella.

    This recipe would make for a delicious breakfast, lunch or an easy dinner.
